Easy As Pie

The weather has been mixed, Tuesday was very wet, and the BBQ to celebrate Liz' birthday was eaten inside her cottage. But Wednesday was wonderfully sunny. Julian had arrived Tuesday night, Adrian and Marion came over, so 15 of us enjoyed sitting outside for another BBQ [our joint 140th birthday!]
Bob cooked all the meats, I made salads, and we had a choice of puds. Eton Mess, Tiramisu, Ice Creams, Fruit - and this "Impossible Coconut Pie"
Really easy, and very tasty - the bottom sets to a creamy custard, the top is a coconutty crust.
INGREDIENTS
  • 4 eggs
  • 2 cups milk
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • 1 cup sugar
  • ½cup plain flour
  • ½tsp baking powder 
  • ¼tsp salt
  • 1 cup desiccated coconut
METHOD
Place all ingredients in a bowl and beat till well mixed. Pour into a greased baking dish 2" deep, 9" diameter [or approx 7" x 9"] Bake in preheated oven 170* for an hour. Serve chilled, hot or warm.

A good time had by all. I shall definitely nake this dessert again.

    1. The cup measure is useful. I forgot to say I added ingredients in reverse order, thus keeping the cup dry!

    3. That sounds like an American recipe so the cups would be 8 fluid ounces instead of 10. Or did the recipe come from a U.K. source?

  3. When I was first married ( in the early 70's) the Impossible pies were very popular. The savoury ones were my favorite! I like using cup measures too. JanF

  4. I've written the recipe down and will try next time we have guests. Your grandchildren must have had a great time together and they are growing up so rapidly. We had a lovely time with Iris on Tuesday despite the rain, she found some books in the Oxfam book shop and I bought her some tops for her holidays. Xx

  5. I'm familiar with impossible coconut pie, and savoury versions with zucchini, but what is the dessert called "Eton Mess", please?

    1. Eton Mess is a popular summer dessert in the UK, named after the famous boys' school [Prince William and Prince Harry were pupils] it is very simple. Whip cream till it is floppy, then gently fold in chunks of broken up meringues, and fresh strawberries which have been quartered, It looks a mess but tastes wonderful

  6. Happy combined 140th birthday! How lovely to be able to celebrate with family.
    That coconut pie recipe sounds delicious! I might have to buy some desiccated coconut to make one! I have frozen grated coconut, coconut flour, coconut milk in cans and powdered form, but, no desiccated coconut!
