Happy Pi Day

Today is a once in a lifetime event for the world’s mathematicians

But last week was British Pie Week here. Though why we don’t have Pie Week around Pi Day seems a little perverse to me.

I had some yellow-stickered Puff Pastry in the freezer, and I had planned to use it up in BPW. My week began in Norfolk, resting with my dodgy wrist and Marion brought me a newspaper to read on Monday – which had an interesting pie recipe in it. I had not heard of flamiche before [nor had Bob]. Here’s the recipe

Flamiche is the name of a Belgian leek tart that is simple to make and delicious... Serve on its own or with roast tomatoes -it’s also great with poached gammon or gammon steaks.

Serves 4-6 Prep 30 min Cook 30 min

Ingredients: 800g trimmed leeks; 75g butter; 5-6 tbsp double cream; 500g puff pastry; flour for dusting; 1 egg yolk; splash of milk.

Slice leeks into thick rounds, wash, and drain. Grease a baking sheet. Melt butter in a large lidded frying pan. Cook leeks gently, for 20 minutes. Stir occasionally Remove lid, bubble away any liquid. Season with s&p, add cream, stir till thick and creamy. Heat oven to 220°. Halve pastry, dust work surface with flour. Roll our two circles approx. 9” in diameter- one slightly larger than the other. Place smaller circle on sheet, spoon cooled leeks into centre, leaving 1” border. Beat egg yolk and milk together- brush some of this round border. Put larger circle over top as lid. Press edges together with fork, brush the whole with egg wash. Bake 25minutes till golden.

I used half quantities of everything – and crème fraiche in place of double cream [I had some in the fridge] And I made mine rectangular – my pastry was in a rectangular block, and it seemed sense just to cut it in two and roll out without disturbing all the pastry layers. I roasted some tomatoes alongside in the oven [cut, and drizzled with oil, sprinkled with salt and some basil leaves]

It tasted very good. Very simple, and quite filling. And meat free!

  1. Love how you managed to post it at exactly the right time! The Pi / Pie looks fabulous too.

    Thought your post about repairing the brides dress was so touching and the pic was really sweet with you beavering away like magic to make her dress perfect. You were a true earth angel for that bride.
