Thank You Jean!

I really enjoy Jean's lifestyle Blog A House in France, and her baking blog A Slice Of Cake. She's a lovely woman, and I got to meet her and her husband when they holidayed in Norfolk a few years ago. Recently Nick bought her a half-price Bundt Pan, and so she decided to make him a cake in it. The Pan was from the Golden Jubilee Range brought out in 2006 when the company was 50 years old.

They still make the golden pans. I have one of these, which Bob found in a charity shop in 2017, unused. I think he paid £6 - they now retail at around £50!
Jean chose a recipe called Fochabers Gingerbread from a book by Scottish writer and chef Sue Lawrence. I had been to the Baxter's Estate in Fochabers many years ago, so the recipe interested me. 
I decided to make the cake on Saturday afternoon. Cakes in Bundt Pans are notoriously difficult to turn out, but Jean also has a recipe for Cake Release Paste on her website. I made a batch.
I followed the recipe [here] And I am thrilled with the result. It turned out beautifully! Thankyou Jean for the inspiration. With family around this week, it is good to have some cake in the tin.

It is rich in dried fruit and ground almonds - the black specks are sultanas etc. The ginger, cloves and mixed spice made the kitchen fragrant as the cake cooked. 
Apart from my Christmas Cake, I haven't made many cakes recently. Jean has inspired me to bake more regularly - merci beaucoup, Jean!

  2. Cake looks delicious and I’m sure it will be eaten this week. I bought a giant cup cake tin from Lakeland to make cakes for my daughter’s 25th birthday and a friend’s 50th. I also bought the release spray from Lakeland. Leanne lent the tin to a friend who had started up a cake business and the tin was never returned! It was an expensive tin and I finally gave up reminding her friend it was a loan. Gingerbread is a favourite in this house but usually made in 1lb loaf tins and sliced and frozen to ensure portion control. Catriona

    1. Portion control is easier with loaf tins. It is easier to cut a slice from a bundt than a circle, you don't get the crumby but at the centre 🍰

  3. I've never had a bundt pan. I once needed one for a recipe and had to improvise with an ordinary cake tin with an empty and very well-washed baked bean tin in the middle. It worked rather well, but it didn't look as lovely as your real thing.

  4. I do have a bundt cake tin and have mixed success trying to get a cake out so I will definitely try the cake release recipe. Your Fochabers cake looks delicious and I bet it smelt divine cooking. My Husband's favourite cake is ginger so will give this a try. I have made a spiced pumpkin bundt cake I think the recipe was one from Nigella. It was tasty. Regards Sue H

  5. Your cake looks great!
    I often bake my cakes in a Bundt pan. In fact, it is about the only cake pan I now use. I usually grease it with butter and dust it with flour and have no problem with releasing the cake.

  6. That looks amazing! It sounds like a perfect celebration cake, rich with flavour.
    I've never baked enough to even try a bundt tin, but I think that they look amazing, and a golden one would be even better!

  8. What a pretty tin and lovely recipe. The potential for sticking is what puts me off using a Bundt pan, perhaps I should reconsider.

  9. I've never owned a bundt tin and as I hardly make cakes these days, its not worth investing. But I will look at your friend's blog, we love France and have had some fabulous holidays there. Xx

    My Bundt tins don't get used as much as they used to but they do impress when they do!

  11. Your cake looks delicious. I had a bundt pan years ago and made a ring of coconut fudge cake which has a centre of coconut and cream cheese, if I remember. I eventually donated the pan and a year or two back I found another better bundt pan in a CS and bought it. I can't remember when I last used it, though!
