Not all the apples from our neighbour's 'freebie basket' were in perfect condition. If there is a blemish or a bruise, the fruit will decay much more quickly. I put the best in the fruit bowl, but four were not really good enough. So I decided to make an apple cake. I've been doing Dorset apple cake for years [well before we lived in that fine county] the recipe is here. That recipe needed 4 eggs, I only had 2. So instead I used a recipe from my Abel and Cole Veg Book, and made two loaf cakes - freezing one and keeping the other in a tin. It was a simple recipe - I didn't have enough apple juice, so made up the liquid with orange juice and water. It came out really well.
The method is simple, and the hints and tips alongside the recipe were good. So I have been lazy and just photographed the pages! I used up more of the rye flour I'd found on Monday too.[I added a generous handful of sultanas to each cake]I served slices spread with butter, accompanied by a good cup of tea.
To my shame I have yet to make a Dorset apple cake despite living in the county for two years! I will have to try out your receipe. I have had difficulty getting cooking apples ever since we moved here. Maybe they have all gone into making the cakes.

DeleteHello. Just popping across from Sue in Suffolk's blog. Apple Cakes (various) are a favourite here and Dorset Apple Cake especially (we used to live in beautiful Dorset too). There's also a Devon recipe called Apple Dappy which is wonderful. Must make it today!!

DeleteI love Apple cake, but this year we have had very few Bramleys on our tree. A friend says the same. Maybe thats why they are in short supply.

ReplyDeleteI have some cooking apples from a neighbour's freebie box. Not sure of what I'll do with them but probably Apple amber. Not sure why I am so curiously adverse to making cakes but I never do. I am quite fussy on the cake and sweet dish front so could be that.
