Pastor Pasta

Bob has enjoyed watching Michela Chiappa’s “Simply Italian” on Channel 4 recently [he was also enjoying reading “Dear Francesca” until I inadvertently returned it to the library before he’d finished it!] Info on MC here

Anyway, Bob declared that he intended to make his own fresh pasta once we were on holiday at Cornerstones. He spent Friday morning doing essential maintenance on the decking outside, then the afternoon cooking.

There seemed to be an awful lot of kneading involved, Bob made enough pasta for two portions, using 200g flour and two eggs to make some tagliatelle.

The airer over the bath made a brilliant improvised drying rack.

Here’s our meal – his is garnished with Parmesan

Bob made an excellent tomato based sauce [with mushrooms, onions, garlic, sweet peppers and pancetta] and he had time to produce a loaf of bread too. “Wholewheat country style with rye”

The pasta was really good, both texture and flavour – but it did seem to take an inordinately long time to produce!

My Friday was much less productive. After a somewhat disturbed night, I spent the early part of the morning at the very helpful Village Surgery [thank you Joan and Joanne] My bites were looking [and feeling] dreadful  and I now have more cream and some antibiotics. The rest of the day I flopped about feeling sleepy and dozing in front of the TV.

  5. I always make at least 6 eggs worth and freeze the dried pasta - cook from frozen and there fore worth the time spent kneading. (never put salt in the dough if you freeze as it goes sort of greyish in the freezer) - my parents are Italian x

  7. Fresh pasta is the best - I avoid the kneading by making it in the food processor. Hope you're feeling better now.
