Love Your Leftovers

There is not much Christmas cake left.  So the little resin figures have been carefully washed and dried and replaced in the box till next year. After the near disaster 4 years ago I don't soak Pauline's angel anymore [*she is sugar not resin]

How have we been managing our leftovers? I had bought a chicken which didn't get served as a roast dinner, so Bob put that with leftover ham** and veg into a splendid pie. That was served up on New Year's Day to Liz and family, along with lots of veg. We all like mash, so we had sweet potato mash, celeriac mash, and regular mash, alongside roast pots and parsnips, plus carrot coins and Yorkshires. 
The pie made 10 servings so kept us going for a few days. 

Bob mixed the various leftover mashes together. I took eight scoops, and some breadcrumbs [leftover crusts] to make a tray of croquettes for the freezer. 

Meanwhile Bob blitzed the remaining mash along with a can of chopped tomatoes, and we have plenty of delicious soup in the freezer. We had a bowl each on Sunday evening with homemade whole meal bread. Very warming!

As we were away for 6 days, I have fewer Christmas leftovers this year. All there is now are a few mince pies. I might make this recipe later. * the angel, not Pauline! **Liz took the final piece of ham to add to a rice based meal.

  1. We are fans of leftovers in this house! Apart from Sunday dinner pie our favourites are pigs in blankets cassoulet and brussels sprouts frittata!
    I love the idea of veg croquettes for the freezer and your fridge cake sounds divine. When they are selling off mince pies after Christmas for 20p a box in Tesco they would be perfect for that!

  2. All sounds hearty and delicious! The pie pastry looks divine!
    As we were away, we didn't get to eat leftovers though we didn't bring lots of bits back from Northumberland including dauphinoise potato. We are still working our way through the leftover Lidl bargain veg I bought. It all keeps.

    Leftovers are probably my favourite meal, not only do you not have to cook them - or at least not much - but when the stars align you can end up with two or three courses. A veritable feast. Three types of mash and roasties? Be still my heart.

  4. You and Bob have been very creative with your leftovers. That pie looks delicious! I froze some of the almsgiving leftovers and we are now eating some of them. I've gone back to a salf-free diet, so I am not able to eat most of the leftovers as they all have salt added to them.

  5. Bubble and squeak with a poached egg on top. I purposely cook too many veg. We nearly always make a turkey and ham pie, and lots of soup with stock from the turkey bones. Nothing gets wasted. We love sweet potatoes in any guide as I don't have to count them as carbs on my Type 2 regime. Regards Sue H

  6. Our daughter made pigs in blankets in Yorkshire puddings with lots of gravy for her Dad and Father-in-law as a leftover dish. I had macaroni cheese! I have made fridge bottom soup this morning which Norrie will have when he comes home from The Shed. Croutons left from Saturday will also be used up. Catriona

  7. The only leftovers we had this year were mince pies and lots of the cheap veg. we are still eating the potatoes, carrots and sprouts which are still as fresh as a daisy in the fridge. Oh, and I bought a 15p swede which is still in there too !
    Bob's pie looks absolutely delicious :)
    It's freezing cold and so very icy here. Stay warm and safe...

  8. Wow, is it really four years since you nearly dissolved that poor little angel, how time flies.

    Leftovers are brilliant things aren't they, sometimes even better than the original meal. My favourite thing is now making purposeful leftovers, which is basically just cooking too much! ;-)

  10. I've made 'bottom of the fridge' soup today and its now in the freezer. I make a ham risotto, using 1 fried onion, tin chopped tomatoes, leftover ham, 4oz cooked rice, mix all together, then add a tin of pineapple chunks, juice and all. My Mum's recipe. Xx

    1. The pineapple sounds an interesting extra. Adding fruit to meat dishes is often the finishing touch [all those fruity, saucy accompaniments to roast meats - cranberry, apple, orange, redcurrant etc]

  11. There are turkey leftovers in the freezer including a carcass waiting to be made into soup, which would be lovely if only I had the energy to make it. Maybe another day will make the difference.
