Hakuna Matata Frittata

 ...the Swahili phrase for no worries.

It has certainly felt as hot as Africa this week! Much daily watering of the raised bed, and my water butts are running low. As I harvest crops, I am continuing to have a ZeroWaste approach where possible. Somebody asked about using the broad bean tops in place of spinach. Here's a photo for you
I  trimmed the top 3" of leaves above the beans, and wilted them in a pan, plus a pat of butter as I served them.
I harvested my first rainbow chard leaves this week - I love that the stalks are red, green and yellow. The leaves were steamed and served at one meal. 
The stalks I chopped into shorter lengths, and used them in a frittata. This was definitely a 'fridge scrape' Zero waste recipe. Lots of bits and pieces to use up.

I had half an onion, the chard stalks, two of my potatoes [large dice] remains of some cooked ham, half a small cooking chorizo, and some  lettuce leaves cut into ribbons.[Thank you Col for the suggestion to put lettuce leaves into omelettes and stir fries] All those Ottolenghi recipes inspired me to add ground cumin and coriander. Three eggs made this easy lunch for two. Definitely a No Worries Frittata

  1. Glad you like using lettuce in omelettes etc, it's far too good to waste.
    If you can get Chinese salt and pepper seasoning, a tiny sprinkling of that in an omelette is wonderful, be careful though, it can be pretty strong!

    1. I didn't realise S&P seasoning was a thing. I've has salt pepper chicken from the Noodle Bar in Norwich in the past, and enjoyed it.

  2. I wish I could send you some rain! Much as I enjoy summer weather, extreme heat is not fun and I'm always thankful for a good shower. Mind you, the torrential rain we had for a few minutes while driving yesterday, was certainly more than needed! I love your food photos. Great frittata!

  3. S&P chicken's lovely, as are S&P chips! I'm not the greatest fan of a lot of chilli, so if from a takeaway or in a restaurant, I ask them to 'hold the red chillies'!
    I use S&P seasoning a LOT, in soups, stews, stir fries, it's just a really useful thing to have in the cupboard, I just keep an eye on how much salt we're eating.

  4. Love the frittata. And am going to try with rocket. Try as I might to make it last - with damp bits of tea towel in the box (which helps a lot) I always seem to have rocket left over

  6. I like the sound of this! Thanks for clarifying on the bean tops. (It was me, Kezzie, who asked- getting fed up of always being anonymous nowadays!)
    I'm also longing for rain!!! My waterbutts are also empty!!
    We have 2 buckets (one was a pedal bin insert that i liberated from a neighbour's skip) so I've been making both C and myself shower with a bucket and we've been carting the water down the stairs to water with. It feels good to do a little water saving in these dry times. C doesn't seem to mind doing it as long as I replace the bucket in the shower for him.

    1. I've got a spare washing up bowl to stand in in my shower. Grateful that being in a bungalow, the bathroom is by the front door so it's easy to step outside and water the flower tubs (please note, I get dressed first. I would not upset the neighbours in the Close by gardening just draped in a bath towel)
