Awesome!

I meant to post this one earlier! I bought a large bunch of bananas – intended for healthy snacking etc, but they went sad and brown because they were lying neglected in a fruit bowl [OK I admit it, the bowl got buried under a large sheet of paper regarding Holiday Club!]

I usually make banana loaf when this happens – but this time decided a batch of muffins would be better. I used a recipe from CatCanCook’s blog, and added a handful of sultanas [extra fibre!] It was very quick and very easy.

Cat’s “Awesome Banana Muffins” (makes 12 muffins)

  • 4 bananas, mashed
  • ½ cup white sugar
  • 1 slightly beaten egg
  • ⅓ cup melted margarine or butter
  • 1 teaspoon bicarbonate of soda [baking soda]
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ cups flour

Mix the mashed banana, sugar, egg and margarine together. In a separate bowl, sift together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together. Spoon into greased muffin tins [or paper cases], and bake at 175˚C [fan oven] for approximately 20 minutes. Enjoy!

The flavour develops the next day, and they freeze very nicely too! If you like walnuts, you can throw a handful, or try adding chocolate chips, or sultanas
