Bob's sister Denise went for a day trip to Swanage and sent us this postcard. On the back is the recipe for Dorset Apple Cake. So I made it on Sunday afternoon.
Mind you, as usual I was trying to do too much. By the time we'd had lunch, I'd sorted my Sunday School stuff, and delivered 60 church leaflets, I didn't quite allow enough time for it to cook before church. I missed the first hymn and tiptoed in during the second, much to the amusement of the rest of the congregation!
Here's the recipe
DORSET APPLE CAKE
- Preheat oven to 170'C
- Grease and line 18cm cake tin
- Cream together 225g each of butter & caster sugar
- Add 4 large eggs, 25g cornflour & 250g self-raising flour
- Fold in 225g chopped Bramley apples
- Pour into cake tin
- Cut segments from an unpeeled apple & soak in lemon juice
- Arrange in circle round top of cake
- Sprinkle with brown sugar for crusty glaze
- Bake for 75minutes

On the plate. Pleased to see the fruit is well distributed and hasn't sunk! It has a good moist flavour. The card says "serve cold or warm with cream." A spoonful of Sainsbury's 'basics' natural yogurt is just as good!
It made a good Sunday Supper whilst we watched 'Miss Marple'!

ReplyDeleteI sent this very postcard to myself when on holiday in Dorset back in the mid 90s. I've baked it many times and it's always been enjoyed by family, friends and (back then) colleagues. A few months ago, disaster, I couldn't find it! Imagine my delight, when searching on Google (and after dismissing many 'not quite right' versions) I found your post. I'm baking it this afternoon.
